This is my go to when we go out to Carlos O’Kelly’s. So delicious. Creamy, garlicky, and cheesy. I mean what more could you ask for? Currently being on the Corona confinement plan (social distancing) I just had to have some so I decided to try to recreate the recipe. I couldn’t find many copycat recipes online, unfortunately, and the one I did find wanted me to use a blender. Ummm HELLO blenders are for milkshakes not dinner! At least in this house.
After deciding to keep the blender inside the cupboard I thought to myself: “Self, I can do this on my own.” I started by using the basis of the recipe I did find for my initial flavor profile. Working with what I had on hand (thankful for the leftover heavy whipping cream in the fridge) I got started. This is how I made it. I didn’t measure much, just kind of winged it, which is how I normally cook.
Chicken Picado Copycat (Carlos O’Kelly’s)

We served it with Rice a Roni Mexican rice, refried beans, chips, and warm tortillas. I like to mix the rice and chicken mix in my tortilla then break up tortilla chips inside for an added crunch. It was yummy. Oh and I didn’t use green pepper as I hate them, but if you are a fan please feel free to dice some up and add on top with the tomatoes and green onions. If you like jalapenos you can garnish with those too or any pepper you like.
Ingredients
- Whole rotisserie chicken chopped with a little juice from the bottom of tray
- Taco Bell taco seasoning 1/2 packet
- 3 Tbsp Butter
- 1/2 cup Sour cream
- 1 1/4 Pints of Heavy whipping cream
- 2 cloves garlic finely chopped
- ¼ cup finely chopped white onion
- 2 Tbsp of chicken bone broth concentrate
- Garlic powder, salt, and pepper (to taste)
- Shredded Colby Jack cheese
- Tomato (finely chopped)
- Green onions (finely chopped)
- Corn starch (add with small amount of cold water for slurry if you need to thicken sauce).
Instructions
- I sauteed the onions in 2 Tbsp of butter in a skillet. Then I put them to the side of the skillet and put my garlic on top of the onions ( not stirring in at this point as I didn’t want it to burn). I added my cubed Chicken to the the other side of skillet and added some spoonfuls of the rotisserie chicken juice and a partial package of taco bell seasoning. Once the chicken was warm and well mixed with juice and seasoning I removed it from the skillet and added another tablespoon of butter and cooked the garlic and onions just until the garlic was fragrant. Then I added probably a little more a pint of heavy whipping cream and my bone broth and cooked it down some then added probably ½ a cup of cheese to it (if you add too much it will make it grainy). Season with garlic powder and salt and pepper to taste. If too thin you can thicken with a corn starch slurry. Simmer a while longer than whisked in my sour cream. Remove from heat. Place chicken in baking dish. Cover in sauce, shredded cheese and bake at 350 till beautiful and bubbly. Top with tomatoes and green onions and bake an additional minute or so.
